Meal Plan Monday #2

Happy Monday!!

I am officially back to the daily grind and out of vacation mode! And I’m so torn as to how I feel about that.

On one hand I am so excited to tackle my goals for the New Year. I really do love the satisfaction of being on a schedule and having those routines in place. But I’m a lazy girl at heart and really love those moments of doing absolutely nothing!

So without further ado… here are my scheduled meals for the week.

Breakfasts will be a mix of bagels with cream cheese, cereal, eggs, pancakes and Isagenix shakes.

For lunches this week I’m going to stick with Peanut Butter and Jelly sandwiches and Chicken Salad Sandwiches. Peanut Butter and Jelly sandwiches can be made ahead of time on Sunday and thrown in the freezer. This is my all time favorite go too for packed lunches because the kids can just wake up in the morning grab a frozen sandwich out of the freezer and by lunch time its thawed and ready to eat! So easy and cheap! I LOVE it! πŸ™‚

Then for the chicken salad sandwiches, I’ll just grab a premade rotisserie chicken and shred it up and make some chicken salad for the week. They can add it to sandwiches and salads, or just eat it with crackers.

For the sides I’ll get grapes, apples, carrots and dip, cheese, and cheddar popcorn.

And here is my dinner schedule for the week

MONDAY:

This Monday we’ll be sticking to the meatless Monday theme and having these yummy Vegetarian Enchiladas from A Cedar Spoon.

On the side I’ll have rice and Tortilla Chips with Salsa. Might even do some Virgin Margaritas for the kids if I have any money leftover in our grocery budget.

TUESDAY:

For Taco Tuesday we’ll be going with these yummy Shrimp Tacos from Dinner at the Zoo. I LOVE mango salsa. Like I could just eat it by the spoonful! Our local ShopRite makes a really yummy one so I’ll just buy it premade there and make sure to incorporate it into two meals this week to make sure I get the most bang for my buck!

WEDNESAY:

I saw this recipe for One pot protein pasta on Pinterest, and immediately fell in love with this blog! I want to be just like them when I grow up! I mean they are cooking gourmet meals while traveling around the world! So neat! Check them out at Freshoffthegrid.com

I’m not a super huge fan of Kale, but I really want to be. And this dish just looks like it is full of so many yummy flavors, I am super excited to try it! And since its a one pot meal I like it even more no sides required!! BUT if you are a carb lovin family like us then a little garlic bread never hurt anyone πŸ˜‰

THURSDAY:

On Thursday we’ll use up the rest of that Mango salsa with this simple pork chop recipe from thenoshery.com! Mike doesn’t eat pork chops so I’ll just cook him up a piece of fish instead.

I’ll serve this with rice again, which may get super boring to some but we are a rice lovin family! And you can always add a few ingredients to make it a little different from the night before. Cilantro lime rice is super yummy, or sometimes I just add scallions. Or you could just have it with a side salad if you’re over the rice.

FRIDAY:

Fridays will always be our leftover night so we can clear the fridge out before the weekend starts! But if we are for some reason our of leftovers (which 9 times out of 10 wouldn’t be the case) we’ll just dig out a frozen pizza or one of my freezer meals that I’m trying to stock up!

SATURDAY:

This Saturday my oldest has a big high school admissions test at Charter School of Wilmington so it will be the perfect day to throw something in the crock pot! She’ll be at the school for 5 hours and then we’ll probably take her out for a latte or something to chat about it! Maybe walk the mall, so knowing that I can just throw everything in the crockpot that morning will take a huge load off my shoulders and prevent us from buying any snacks or meals while we’re out.

I found this recipe for slow cooker chicken and dumplings from Belleofthekitchen.com It looks so yummy and the perfect meal for a cold Saturday night!

You can serve this with a side salad or veggie of choice!

SUNDAY:

Sunday is my favorite dinner of the week! I just love the idea behind Sunday being the day of rest and spending good quality family time together. So although we do usually have dinners at the table together as a family during the week, if for some reason we missed a few days we make it a point to eat together on Sunday.

So this Sunday I’ll be doing another pork chop recipe since pork chops are on sale this week for me. (Again, I’ll just cook a piece of fish for MIke to go along with everything else.)

I’m going to make this Crock pot smothered pork chop recipes from The country Cook! This recipe looks soo yummy! And I will cook it with Mashed Potatoes and broccoli just like its pictured. It just looks like the perfect Sunday night meal if you ask me! I’ll also add some biscuits, because Sunday are going to be my Carb Day! πŸ˜‰

I still have quite a few boxes of brownies left in the cabniets so I’ll problay make a few batches of those as well. I like to have some sweets to offer after dinners. Its not always a must but we do have some sweet teeth in our family. I’ll do my best to try out some healthier sweets too, like sliceing up an apple or pear and microwaving it for a minute or two with some cinnamon and honey. You can top it with some frozen Vanilla Greek Yogurt instead of ice cream and go to sleep feeling anything but guilty!

This post is making me super hungry!

I put everything in my grocery cart at Walmart online and the total this week is only $123.21! That’s 6 delicious home cooked dinners for 5 people that include organic foods and seafood, plus breakfasts and lunches for an entire week for under $130.

Guys, it can be done….

OK, so I’m so excited to get going with this week! I have so many ideas in my head for 2019 and this will be my first full work week to get things started and really start building things up for the future!
