My kids might very well disown me after they realize my plans for this weeks meal plan, but I’m going for it!
I am going to challenge myself to a vegetarian week!
No meats in any meals. And I have to be honest, its going to be super super tough for all of us I think!
Even my pescatarian hubby.
No fish. No Shrimp. No Meat.
This week is going to be a meatless Monday times 7!

MONDAY
Tortellini Soup from the Recipe Critic.
This one I think will be a fan favorite. I don’t think you can really go wrong with cheese filled tortellini, tomatoes and spinach. If you ask me it sounds like the perfect meal on a cold Winter night.
I’ll buy a loaf of French bread to serve with it.
TUESDAY
Vegetarian Quinoa Chili from Damn Delicious. This will be a tough one for my girl Cecilia. She is not a fan at all of black beans. I think the quinoa and other ingredients kind of take away from the black beans a bit, so I’m hoping she’ll go for it.
If not, there will always be Peanut butter and jelly on hand. 🙂
WEDNESDAY
Grilled Cheese from Williams Sonoma and Tomato Soup. We’re super basic and like the canned tomato soup from Campbells.
Its what I grew up eating and I still absolutely love it to this day.
There is abosolutely nothing fancy about it.
Maybe I like it just because it holds so many memories.
Who knows. But canned soup it is!
My kids will just eat your good old fashioned white bread and melted cheddar grilled cheese sandwiches. Not the healthiest meal of the week, but it gets the job done.
For mike and I, I may go fancy and make the sandwiches with a fancier cheese and arugula like the Williams and Sonoma Recipe.
Either way, it’ll be a meatless, easy, cheap midweek dinner!
THURSDAY
Quinoa and Egg Enchilada bake from Alaska from scratch.
I’ve always wanted to try one of these egg bake dishes!
I’m a sucker for an egg yolk!
I’ll most likely omit the avocado just to save a buck! And possibly make a version without black beans for my girl.
Friday we’ll stick to our leftover night.
I’m thinking the only meals that will be left over worthy are the tortellini and the quinoa, but that should be plenty to serve for dinner.
SATURDAY
Vegetable Pot Pie from momstestkitchen.com
I LOVE chicken pot pie, so I’m pretty sure this one will be a winner in our family. Its literally the same exact thing and chicken pot pie, just without the chicken.
Still creamy.
Still rich in flavor.
And still super comforting.
I’ll serve this with a side salad.
And Sunday, we will gobble up this unbelievably yummy looking pizza!

This Pizza looks sooo yummy!
I’ll probably just buy premade pizza dough just to save on time, if I can find it for a reasonable price.
Breakfasts will be the usual pancakes, eggs, shakes, etc. And Lunches the same ol’ boring lunch.
My girls come home half the time with half of there lunch still in their lunchbox.
I don’t know if they get caught up chatting and just don’t finish or if they truly just ran out of time. But I’m just not going to get too fancy on lunches.
As long as they have a base, a fruit, a veggie and a treat I think they are doing A ok! 😉
