Meal Plan Monday #6 Slowww Cookin

I have to admit, I’m still very ANTI pressures cooker.

Something about them just terrifies me.

I’ve heard of so many accidents with the things, and although I know if you follow directions and safety warnings etc, you should be fine…

But

I just like to play it safe.

So for now I’m just staying on the slow cooker train.

Although, I’ve got to say, after that traumatic episode of This Is Us I was even hesitant about using these for a while…

Oh Jack.

But anyway, where was I….

I mean how awesome is it to just throw a few things in a crockpot when you wake up in the morning then come home to the house smelling like HEAVEN!

So this week I’m going to plan ALL Crockpot/slowcooker meals.

Easy.

Convenient.

Low Budget.

MONDAY:

Apparently these are the most famous chicken tacos on the internet!

And I mean 3 ingredients is all you need in the morning!

  1. Chicken
  2. taco seasoning
  3. salsa

Winner winner chicken taco dinner!

Then you can wrap em up in a taco shell or go low carb and put them over a salad. Whatever your little heart desires.

Serve with Guac, sour cream, cilantro and a nice big Margarita.

Who said tacos had to be for a Tuesday anyway?

TUESDAY:

Who doesn’t love a good old fashioned Brocoli and Cheese soup.

The only thing that makes it better is the crockpot version.

So Simple, Easy and DELICIOUS!

Brocoli and cheese soup is definitely a favorite in our house! I’m cheap so we won’t get all fancy with the bread bowls, but there will still definitely be bread!

And I’ll serve a side salad for some extra greens and veggies!

I’ll probably double the recipe and freeze some, if there is any left to freeze…

WEDNESDAY:

I love homemade Chinese food!

A few weeks back on one of my Meal Plan Mondays we made teriyaki noodles and homemade egg rolls.

It was Devoured guys!

So yummy.

And made with quality ingredients instead of what you might find around the corner and the little Chinese takeout place.

Not knocking that Chinese takeout place at all though, its also sooo yummy.

But more expensive and probably not as good for you.

So anyway…

This Crockpot Beef and Brocoli meal looks soo delicious. I can’t wait to try it out. 🙂

And since its a crockpot meal its just as convenient as the takeout but without the tip!

THURSDAY:

Sausage and Peppers.

These used to be one of my all time favorite recipes!

We usually only had it on football Sundays or at Christmas at my moms.

But for some rason it feels like its been ages since I’ve had it.

So I am brining it back this week, and hoping my kids love it as much as I do!

FRIDAY:

SATURDAY:

Soup again?

This Slow cooker chicken corn chowder looks ahhhmazing!

And the 3 main ingredients are Chicken, corn and heavy cream. Other then that its probably all staple seasonings you already have on hand.

If I had to choose the perfect day for a slow cooker soup, I think Saturday would be that day.

You can wake up and get it started then go about the day with your family, anxiously awaiting dinner time as you smell it coming together all day long.

SUNDAY:

And Sunday…

The day of Rest.

I guess that would be the perfect day for the slow cooker too.

Or maybe there really is no perfect day for it because they are all perfect days for it.

I’m going with White Turkey Lasagna for the win this Sunday.

I’ve never had White Lasagna before, so I am very much looking forward to it!

Served with a side salad and garlic bread.

I think it will be another perfect Sunday meal.

Now if you remember I mentioned before that Mike is pescatarian. So this week will be a tough one for him. But I’ll just buy a few pounds of shrimp and tilapia that he’ll be able to cook for the week.

He always pairs it with jasmine rice and broccoli or spinach.

So I’ll just make sure to have enough of that on hand.

And that a wrap!
