The Easiest Homemade POKE Bowls

No matter how you decide to pronounce it, I think its safe to say we can all agree that these Poke Bowls are sooo good!

And for all you Seafood haters, just swap out the fish for Chicken and you’re golden!

OR better yet, if your a Veggie only lover then skip the meat altogether.

Add some Tofu or Chickpeas and you’ve got yourself a delicious lunch or dinner.

Our Softball schedule is officially upon us.

That means dinner can be a big challenge.

My girls are both playing for their school team as well as our local Rec League so there are several days a week where they get out of school, practice there from 3-5 and then head over to the next teams practice from 6-8.

There is the tiniest little window of opportunity for them to eat anything.

We’ve stocked up on Protein Bars, string cheese, apples, peanuts, yogurts etc.

Things they can quickly eat as their running from one spot to the next.

But, when I can, I still like to try to get them a nice meal in between.

So the other day I threw together some quick homemade Poke bowls, which they DEVOURED, and have requested two more times in the past week.

SO good.

SO easy!

The Base of the bowl can be brown rice, white rice, jasmine rice, shushi rice, or even Quinoa! Whatever your preference.

Just make a huge batch of it on Sunday and you’ll have plenty for the week.

We always go with either brown rice or Jasmine rice.

Then to top it off you add your protein of choice ie:

  1. chicken
  2. shrimp
  3. tuna
  4. salmon
  5. tofu

You can prep whatever proteins you are going to use ahead of time as well, so it will literally be grab and go during the week.

We usually only make these with Shrimp and I’ll just buy a bag of Frozen wild caught shrimp and have it all thawed out and ready to add to the bowls.

And your veggies of choice ie:

  1. cucumber
  2. avocado
  3. shredded carrots
  4. scallions
  5. endamame
  6. jalepeno

You can also add some type of crunch to the top ie:

  1. French fried onion
  2. sesame seeds
  3. wonton chips
  4. seaweed strips

And finally you add your sauce of choice.

Some of the fancy restaurants have several different sauces to choose from, we always just use soy sauce and then I make a spicy mayo using one part mayo 1/2 part sriracha sauce. And I really just eye ball the measurements. you can add more or less or either depending on the consistency and spice you are going for.

So basically these bowls are just deconstructed sushi.

Prep them all on Sunday and enjoy all week! 🙂
