Meal Plan Monday #4

This weeks Meal Plan Monday is all about Delish.com.

I was browsing Pinterest the other day looking for some new recipes to try out, and I stumbled upon this Chicken Ceasar Pasta from Delish.com.

It looked so delicious. Not to mention, how fun is it to watch the entire meal being prepared in less then a minute!

So I figured I’d head over to their site and browse around for some more yummy ones and add them to the list for the week.

MONDAY:

TUESDAY:

Pan fried Tilapia

I know Tilapia isn’t the best for you fish. But I really do enjoy the flavor, and its so much cheaper then other fish. So every now and then we will go for it.

WEDNESDAY:

Blackened Shrimp Bowls

THURSDAY:

Deep Dish Cauliflower pizza.

If you are a carb lovin, cauliflower nay-sayer, but haven’t tried it yet. Please do yourself a favor and just give it a taste. We have had Buffalo Cauliflower, Kung Pao Cauliflower, and have done cauliflower crust pizza in the past. All soo yummy! You seriously will not miss the carbs!

SATURDAY:

We’re celebrating my girl Sophia’s 12th birthday with family on this day so our dinner is completely requested by her!

So her dinner request is

  • Savory herb and garlic chicken
  • moms mac and Cheese
  • mini crab cakes
  • Ceasar salad
  • cheese and crackers
  • chips and dips

We just have grandparents, uncles, Aunts and cousins coming over to play a little Just dance and hang for the night.

SUNDAY:

Chicken Enchilada Quinoa Bake

I may omit the Chicken and cook Quinoa in Veggie broth so that Mike can also enjoy this meal. Or make two versions of it, not sure yet. But doesn’t this just look soo dang good!

I’m a sucker for an enchilada, so I’m super excited to try it as a casserole.

For Breakfasts this week I’m going to do Eggs, Sausage and cheese on English Muffins. I’ll just prep a bunch of them to have on hand for a quick and easy running out the door breakfast.

We also always have are shakes handy in case anyone just wants to go that route.

And for lunches, I’m going to grab some tortillas to switch it up just a tad from their normal sandwiches. We’ll do Turkey or ham and cheese on a wrap, popcorn, fruits, veggeis, granola bars.
