I’m behind again guys! Can I blame it on Mike being away all last week? I’ve been solo so I’ve stayed extra busy. Though if I’m being honest, not as busy as I was hoping I’d be.
I had this vision of Mike coming home from his week long business trip and entering into a completely transformed house.
But as always time gets away from me, and it didn’t go down quite like I had planned it to.
Though the house was spotless. Lots of furniture moved and the master bathroom painted. It really wasn’t everything I had hoped for.
But…
Progress still right..
Anyway, for this weeks Meal Plan Monday I will be using almost everything I already have on hand.
I’m pretty sure this will be one of my favorite weeks since I’m hoping it will really help out on the grocery run.
Even though I have my meals all planned out every week, there are some weeks where we’ll just do leftovers or if we are invited to someone’s house for dinner I’ll save the meal for another time.
One of the meals I never ended up making was spaghetti and meatballs.
I ended up just throwing the ground beef in the freezer and I still have everything I need to make the sauce.
And even better yet, I found a different recipe then the one I had posted here, and its all done in the CROCK!
No more throwing water in a pot and watching it boil.
I’ve gotten spoiled from last weeks Slow Cooking Meal Plan Monday.
I’m super excited to try this one from Delish.com.
MONDAY:
CrockPot Spaghetti and Meatballs
All I have to buy to go with this, is a loaf of Bread which is only $1 at Walmart.
TUESDAY:
I also have about a pound and a half of chicken in the freezer that we’ll need to use up so I’m going with one of our Family favorites, “Savory Herb and Garlic” chicken.
This chicken is seriously some of the best chicken I’ve EVER had.
I just mix a packet of Lipton’s Savory Herb and Garlic soup mix with 1/4 cup of mayonnaise and about a 1/2 TB of water.
Pound out the chicken super thin and put it in a casserole dish.
Spread the soup mix all over the chicken and bake at 375 for 20 minutes.
I’ll take a pic when we make it and add it to the post.
I’ll probably buy a bag of potatoes and serve this with mashed potatoes, or maybe some twice baked.
WEDNESDAY:
I have about 3 bags of frozen cheese raviolis in the freezer and never would have thought to serve it with shrimp.
But this recipe looks so easy and yummy!
We always have a few bags of frozen shrimp on hand since Mike eats a primarily fish only diet. So all I’ll need to buy is a jar of alfredo sauce.
THURSDAY:
Any taco bell lovers in the house?!
I’m pretty sure I could have lived on Taco Bell growing up.
As I got older I stopped eating it as much, but I have to admit I’m still a fan.
Here’s a healthier homemade version of taco bells Crunch Wrap Supreme.
One of my absolute favorites!
And I have enough ground beef in the freezer to cook up some taco meat so I’ll just need to buy the fixings.

- sour cream
- nacho cheese
- Burrito Sized tortillas
- Tostada shells
I’ll make a vegetarian version as well with refried beans for Mike.

SUNDAY:
Sunday’s going to be a tough one because I’m pretty sure I cleared out the fridge with those last 5 recipes.
So I’m thinking we’ll just do breakfast for dinner.
I’ll buy a loaf of bread for this Texas French Toast Bake And then I’ll just make eggs to order and some sausage and bacon, since we usually always have that on hand as well.
I’m hoping to stock back up on lots of things with this weeks grocery money.
I’m also going to be planning some “homeschool” breakfast and lunch meals for my little guy and my niece who I’m going to taking care of starting next week. So look out for that if you need ideas for what to feed your toddeler/preschool age kiddos during the day.
