What’s Up Wednesday 8/24/19

Happy Wednesday!!

Its been such a long time since I joined in on this fun link up hosted by Shay and Shaeffer.

This link up is one of my favorite, because it is just so random. My favorite kind of blog posts to read and write! 🙂

Yesterday I recapped our fun little Summer, but today I’m excited to talk about and share a little bit of everything else.

1. WHAT WE’RE EATING THIS WEEK:

If you follow me on IG you have probably heard me talk about the meal plan service I use.

If not, you seriousy need to go check it out!

Scarlett over at madeitateitlovedit.com creates a weekly menu that she sends out every Friday. Not only does she list the meals, but she provides you with the grocery list.

And as if that wasn’t cutting off a huge chunk of your time already,she also sends it with clickable links so that if you are a Walmart grocery pickup kind of family like us, you literally just click on the item and it adds it right to your cart.

She has made the grocery shopping/meal planning portion of my week sooo easy!

Her meal plan also makes it easy for me to change it up a bit. I don’t have to follow her plan exactly. We have some family favorites here that we really don’t want to see go, so I make sure to incorporate one or two recipes from our favorites list each week.

Like this delicious Quinoa chili, that we like to put on top of corn bread waffes (Just the jiffy mix right on a waffle maker)

Some of Scarlett’s recipes are quickly being added to that favorites list as well.

We’ve had these chicken Taquitos (or flautas) several times since we’ve discovered them. Luckily this week they were already on her menu!

sooo easy and sooo good!

And since my oldest was back to school this week and the other two will be following soon, I got back on track with preparing lots of food ahead of time.

Big batches of Pancakes, Breakfast Burritos, Homemade Uncrustables (using this fun little gadget) and so much more can be made ahead of time and frozen until the day you need it!

It made mornings sooo much easier.

2. WHAT I’M REMINICING ABOUT

Since I very unwillingly had to send my oldest off to High School on Monday I’ve been reminiscing a lot about her first day of Kindergarten.

She was so excited to take the bus to school, but we had choiced her to a school that didn’t offer a bus stop near our house.

We were first time parents and wanted to make her first day of Kindergarten everything that she’d ever dreamed of so we would drive past her school to catch a bus with friends that lived in the neighborhood over.

This only lasted for a week or so. I quickly realized how silly the whole thing was. And it turned out that she wasn’t really cut out for the bus rides anyway.

So bittersweet watching this girl grow.

3.WHAT I’M LOVING

I’ve just been loving a little extra on my family lately. We don’t often get a lot of down time so any time we get the chance we like to just cuddle up on the couch with a movie or spend some time playing a board game or two.

These are the best days of our lives.

4. WHAT I’VE BEEN UP TO

I’ve just been over here trying to prep as much as possible for the upcoming school year.

Still in serious shock that its already here.

5. WHAT IM DREADING

The official end of Summer. There’s a little part of me that is so ready to pumpkin spice everything but this summer just went by faster then ever and I’m so not ready to let it go just yet!

6. WHAT I’M WORKING ON

This week I FINALLY started working on our tiny little powder room! I’m working on giving it a HUGE refresh with a very SMALL budget.

Keeping it under $100 and the changes will be mind blowing.

Cant wait to share all the details next week!!

I’ll give you a little peek though at how dramatic the change will be…

7. WHAT I’M EXCITED ABOUT

See above!! Soo excited!!!

8. WHAT I’M WATCHING/READING

I’m currently trying to finish up my last book of the month so I can share my review with you all! I’m still super bummed at the about of reading I was able to get in this summer.

I really thought summer would be when I got way ahead of my reading goal for the year. But I’m pretty sure I fell behind instead!

9. WHAT I’M LISTENING TO

I’ve had the Spotify station “Country Drive” on repeat lately.

Love some good old Country.

10. WHAT I’M WEARING

And although i’m not currently wearing them I’m so excited to wear some of these super cute amazon finds!

I know I just said how much I don’t want summer to go, but these cute finds will make the transition a teeny bit better. 😉

11. WHAT I’M DOING THIS WEEKEND

We are celebrating the last official weekend of summer and my beautiful mommas birthday with a big waterslide party/BBQ! I am beyond excited!

12. WHAT I’M LOOKING FOWARD TO NEXT MONTH

If I absolutely have to allow August to end, I will say I am looking forward to the crisp fall air and the yummy fall recipes and fun traditions.

13. WHAT ELSE IS NEW

Other then that, not much else is new here. We’re just getting by and making memories one day at a time.
